Where We Roast

Our roastery sits in Pine Flat, California, at the edge of the Sierra Nevada near Sequoia National Forest and the Trail of 100 Giants.

At 4,000 feet elevation, roasting coffee behaves differently. Lower air pressure and dry mountain air change how heat moves through the bean - moisture evaporates faster, and timing becomes more precise. Every roast profile we use is developed specifically for these conditions.

This is not a replicated sea-level process. It's built for the mountain.

Who We Are

Alex & Juliya - Founders

We moved to Pine Flat in 2020 from San Francisco, drawn to a slower pace and a closer connection to the place we live.

What started as roasting micro-lots for ourselves turned into a daily practice - learning the craft, understanding how different beans behave, and refining flavor through repetition. Over time, it became something we wanted to share.

We built Pine Flat Roastery in 2025 to bring that work to our community. We roast in small batches, not because it scales, but because it allows us to stay close to the coffee - adjusting, refining, and improving with every roast.

The coffee we make isn't something you'll find in a regular store. It's the result of hands-on work, constant iteration, and a genuine love for the craft.

How We Source Coffee

We focus on traceable, small-lot coffees sourced from farms and cooperatives we trust.

We are constantly searching for small-lot coffees - the kind you won't find in a regular store - and roasting them in batches small enough to preserve what makes them special.

For every coffee we release, we publish origin details, processing methods, and tasting notes.
