What does roast‑to‑order mean?

At Pine Flat Roastery, roast‑to‑order means we do not roast our beans until you place an order. Each small batch is prepared specifically for you, one bag at a time, so you always receive the freshest coffee we can make.

Why freshness matters

Coffee needs a short rest after roasting before it tastes its best. During the first couple of days the beans are still degassing and flavours can be unstable, but between about day 4 and day 14 the coffee reaches its “sweet spot”. By roasting your order and shipping it the next business day, we ensure your coffee arrives just as it’s entering this peak flavour window.

Our roast & ship cadence

We roast in small batches at our roastery in Pine Flat, California (elevation 4,000 ft). Once roasted, your beans rest briefly and then ship the next business day. Our shipping is currently limited to California, which helps us deliver your coffee right when it’s ready to brew.
